Friday Favorites – McCormick Generation Fresh Website

Fall is quickly approaching and thoughts of comfort food are whirling in my head.  Hearty portions of Mac and cheese, beef stew, grilled cheese sandwiches and tomato soup, mashed potatoes and chicken pot pie* are likely in my near future.

Not once did I think about a refreshing salad filled with greens and veggies, a tall glass of v-8 or a kale smoothie.  My body tends to crave fattening foods come winter, but that’s not in line with the healthy lifestyle I’ve been working so hard to create as I lost my first 20lbs and work on the next 20.  I’ve always been a fan of re-working my mom’s classic recipes into healthier versions.  Switching out sour cream and replacing it with 0% Greek yogurt, swapping out regular cheese for the 2% version or better yet Daiya non dairy, non soy cheese and cutting out the salt in general have become a few of my tricks.

I just found out about McCormick’s Generation Fresh website, a fantastic resource of recipes from people like you and me who are creating and sharing healthier meals that full of flavor while being low on salt, fat and sugar.  You’ll want to make sure you have some time on your hands when you visit the site since there hundreds of recipes to explore.

Generation Fresh Pinterest Contest

McCormick launched a Pinterest contest yesterday and they are giving away 5 fabulous Generation Fresh kits I saw the kits they are giving away at Fitblogging.  AMAZING!!  I’m going to enter as much as possible.  It’s really easy to enter – all you need to do is repin one of the pins from the Generation Fresh – Pin It to Win It! Board.

My Re-Fresh

Here’s my recipe refresh inspired by the Weight Watchers Cheese recipe I discovered at their Fit Bloggin’ sponsor table.  I’ll add a pic and report back on the flavor this weekend when I have time to try it out.

Healthier Mozzarella Sticks

6 Tablespoons Nature’s Path non-gmo honeyed corn flakes (ground)

½ Teaspoon McCormick garlic powder

½ Teaspoon McCormick Perfect Pinch Italian spices

2 Tablespoons enriched flower (trying to find a non-flower replacement for this)

2 Egg whites lightly scrambled

4 reduced fat mozzarella sticks

2 cups marinara (my favorite is Pastorelli)

Combine corn flakes and spices. Place flower on small plate, dip cheese stick in flower, shake off excess, dip in scrambled eggs, dip in corn flake mixture – repeat. Preheat oven to 400.  Cook for 8 – 10 minutes.
